Mango Sorbet – Recipe File
- 4 mangoes, peeled, stoned and chopped
- juice of 1 lime
- 85g sugar
- 6 tbsp glucose
- 2 egg whites
Process the mango chunks, lime juice, sugar, glucose and water in a food processor.
Pulse so that it forms a smooth puree.
Transfer the mango mixture to a saucepan.
Bring to a boil, then set aside to cool.
Whisk the egg whites until just frothy.
Fold the whisked egg white into the cooled mango puree.
Pour into ice cream maker and churn until frozen.
Made the day the orchids flowered.
