Aaron’s Fruit Cake: by Aaron Bertelsen at Great Dixter gardening lecture


  • 240g butter
  • 1 1/2 cups water
  • 1 kg mixed dried fruit
  • 1/2 cup sultanas
  • 12 prunes
  • tin of condensed miilk
  • 1 tsp vanilla extract
  • 1 tab golden syrup
  • Brandy to taste
  • 1 large tsp baking soda
  • 1 tsp baking powder
  • 2 1/2 cups flour
  • 1/2 cup almonds
  • freshly ground nutmeg
  • mixed spice


Preheat the oven to 140 degrees C. Line a square 9 inch tin with baking paper and cut a square to go over the top of the cake.

Heat the butter and water in a large pan until the butter begins to melt.

Add all the dried fruit, condensed milk, vanilla, golden syrup and brandy. Simmer for 5 mins and then leave to cool.


Mix all the dry ingredients together and once add to fruit and butter mixture.

Put into the tin and bake for 2 1/2 hours. Leave in the oven till cooled.

Made the day we cut the rotten lilac branches down, in a bid to save the tree.
