Margarita’s Tiramisu


Serves  8 – 10

  • 180 grams sugar
  • 5 Eggs
  • 500g Mascarpone
  • Pot of coffee
  • Several teaspoons brandy or, if you can get it the Italian coffee liquor: Caffe Borghetti
  • Pavasini biscuits (you can get these in old school Italian delis; they are far superior to Lady’s Fingers which you can use at a push) – about 2 packets
  • Grated chocolate

Separate the eggs.

Beat the sugar with the egg yolks until white and pale

Mix the mascarpone, one pkt at a time with the egg and sugar mix. Add three or four teaspoons of coffee and two teaspoons of alcohol to mix.

Add pinch of salt to egg white and beat until stiff peaks form.

Whisk egg whites with mascarpone, egg, sugar mix until runny like a cream.

Add two/three teaspoons alcohol to coffee and put in flattish container.

Line dish with layer of cream mix.

Soak biscuits for 4 seconds in each side, repeat and lay out horizontally on mix.


Cover with cream.

Repeat with biscuits, but vertically.


Cover with cream.

Let sit in fridge to sit for minimum 4 hours. Overnight is best.

Before serving cover in layer of sieved cocoa powder or for extra sin, shaved chocolate.

Eaten for pudding on New Year’s Eve, 2013.
