Edamame and sugar snap salad with miso ginger dressing

Edamame and sugar snap salad: A Change of Appetite by Diana Henry


Serves 4


  • 2 tabs white miso paste
  • 1 tab rice vinegar
  • 2 tabs ground nut oil
  • 2 tabs water
  • 1 tsp runny honey
  • 2cm peeled, grated root ginger



  • 100g cooked edamame
  • 100g raw sugar snap peas, sliced lengthways
  • 8 slices radishes
  • Handful mizuna


Mix the ingredients for the dressing together and toss with all the salad ingredients.


Great with Japanese ginger and garlic chicken with smashed cucumber.
