Hotel Costes Pineapple: Via Clare Coulson
- 1 pineapple
- small bunch of mint
- tab of light brown muscovado sugar
Peel the pineapple properly, and cut the finest slices possible (use a mandolin).
Lay them out on a big plate, as flat as possible.
Sprinkle over finely chopped mint and brown sugar and leave to sit for an hour or so.
Serve at room temp.
Eaten the day we went on the train.
