Orange and polenta biscuits: Jamie Oliver’s The Return of the Naked Chef

Makes around 50 biscuits. Better to make half the amount. These are good with ice cream or chocolate mousse.

  • 170g (85g) butter
  • 170g (85g) sugar
  • 255g (128g) polenta
  • 100g (50g) plain flour
  • zest of 2 – 3 (1 -2) oranges, lemons or meyer lemons.
  • 2 (1) large eggs.

 

Preheat the oven to 190℃

Rub the butter, sugar, polenta and flour together before mixing in the orange zest and the eggs.

Cover with cling film and put in the fridge for an hour until slightly firm.

Place a large square of greaseproof paper on a baking tray  and spoon small teaspoons of the mixture in lines 2 inches apart.

Bake in preheated oven for around 5 – 6 mins until the outside edges of the biscuits are lightly golden.

Remove from the oven and allow to cool for 15 mins before eating.

Made the day the orange one had his hair cut.
