Pig cupcakes: Children’s First Cookbook by Annabel Karmel


Easy recipe and great to do with kids.

For the cakes:

  • 2 large eggs
  • 125g caster sugar
  • 125g soft butter
  • 125g self-raising flour
  • 1 tsp vanilla essence


For the icing and decorations:

  • 125g icing sugar
  • 65g very soft butter
  • 1 tab water
  • pink food colouring
  • pink marshmallows
  • red and black writing icing


To make the cakes:

Heat the oven to 180℃.

Put all the ingredients in a mixer bowl and beat together until the mixture if smooth and light in colour.

Line a cupcake tin – for 12 cakes – with paper cases and half fill each cake with the cake mixture.

Cook the cakes for 18-20 mins, until they have risen up and are golden in colour and spring back into shape when pressed.


For the icing etc: 

Beat the butter until creamy in a mixer (or by hand).

Sieve the icing sugar into the bowl and beat with the butter. Add 1 tab water and a few drops of pink food colouring.

Spread the pink icing on top of the cup cakes.

Cut the marshmallows in half horizontally and use for nose, and then the other half in two again – for ears. Use red icing writing for eyes and smile and black for nostrils on nose.
