Blood orange sorbet: Diana Henry’s A Change of Appetite


  • 135g granulated sugar
  • finely grated zest of 1 blood orange (or regular orange)
  • 250ml blood orange juice (6 – 8 blood oranges)
  • Juice of ½ lemon
  • 8 cardamom pods, crushed (optional)
  • Pistachios to serve (optional)


Put 150ml of water and the sugar in a saucepan and heat, stirring to help the sugar dissolve. Add the cardamom if using, zest and juices and bring to the boil. Take off the heat and leave to cool.

Strain and put the liquid into an ice-cream maker to churn.

Serve the sorbet with some pistachios – chopped or crushed on top of each portion – if using.
