Melon & Cucumber Juice: DG
- 1 ripe Galia or Honeydew melons
- ½ cucumber, peeled and deseeded
- 1 lime, juiced
- 2 tsp agave syrup or honey
- sparkling water (or champagne)
- fresh mint sprig
Cut the melon into wedges, scoop out the seeds, peel and cube.
Place the melon, cucumber, lime juice and agave syrup or honey in a blender or food processor and blend until smooth.
Strain the liquid through a sieve. Add more honey/agave and lime to taste.
Serve over ice in a jug garnished with a sprig of mint and topped up with cold sparkling water (or champagne).
