American breakfast pancakes: How to be a Domestic Goddess by Nigella Lawson
Makes about 11 blini sized pancakes
- 225g plain flour
- 1 tab baking powder
- pinch of salt
- 1 tsp sugar
- 2 large eggs, beaten
- 30g butter, melted and cooled
- 300ml milk
- butter for frying
Put all the ingredients into a blender and blitz. If making by hand: make a well in the dry ingredients, then beat in the eggs, melted butter and milk.
Transfer to a jug and leave, ideally, for 20 mins. You can add more milk if using a blini pan.
Cook on a frying pan or smooth, hot griddle. When the upper side of the pancake is blistering and bubbling, turn it over and cook the other side for less than a minute.
