Una’s quick chocolate brownies: Una Hanley
- 250grams butter
- 125 grams cocoa powder – best quality
- 4 eggs
- 2 cups caster sugar
Heat oven to 150 ℃.
Melt butter gently – don’t let it boil.
Add cocoa and mix well.
Beat eggs and sugar together until really light and fluffy (use whisk attachment on kitchenaid if you have one. If not, this will take a lot of arm power).
Add chocolate and butter mix to butter and sugar. Mix together carefully.
Pour into large GREASEPROOF PAPER lined large baking tray (even if tray is non stick).
Bake for half an hour. Undercook them slightly so they stay moist and sticky.
Can be put into the fridge for fridge brownies.
