Brown sugar and apple spiced loaf: Bake Me a Cake as Fast as You Can by Miranda Gore Browne

  • 300g cooking apples, e.g. Bramley
  • grated zest and juice of 1 lemon
  • 225g unsalted butter
  • 225g soft brown sugar
  • 3 large eggs
  • 225g self-raising flour
  • 2 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp mixed spice
  • 25g ground almonds
  • 1 tab demerara sugar, to sprinkle

 

Preheat the oven to 180℃ and line a 2-lb loaf tin with non-stick baking paper.

Peel, core and chop the apples into 1cm dice. Place in a bowl and toss with the lemon juice to prevent discolouration.

Cream the butter, sugar and lemon zest by hand in a large bowl or in an electric mixer. Add the eggs and beat well to combine.

Sift together the flour, baking powder and spices and fold into the mixture with the ground almonds.

Drain the apple pieces and stir into the mixture, then spoon into the prepared tin.

Bake in the preheated oven for 1 hour or until dark golden and coming away from the sides of the tine.

As soon as the cake comes out of the oven, sprinkle with the demerara sugar and leave to cool in the tin.
