Chocolate Slabs: Kitchen Diaries III: A Year of Good Eating by Nigel Slater

  • 400g dark chocolate
  • 400g of mixed crystallised fruits, dried fruit, nuts (toasted if hazelnuts), freeze dried raspberries, strawberries or whatever you fancy.
  • 1 tsp sea salt flakes

 

Melt the chocolate carefully in a bain marie.

Line a 32cm x 22cm tray with non stick parchment paper.

Pour the melted chocolate into the try, shake firmly to spread over the surface and into the corners.

Chop the crystallised fruits into small wedges or dice. A mixture of sizes looks best.

Scatter the fruits, nuts etc over the chocolate.

Lastly, add the sea salt flakes.

Leave in a cool place to set. The fridge is ideal, but not for longer than an hour.

Snap into jagged pieces.
