Miso & Soy Glazed Mackerel: Simple by Diana Henry adapted by DG


Serve with rice and stir-fried greens.

Serves 4

  • 2 tabs sake
  • 2 tabs mirin
  • 2 tabs white miso paste
  • 3 tsp caster sugar
  • 3 tsp soy sauce
  • 2 red chillies, deseeded and finely chopped
  • 2 small garlic cloves, crushed
  • 2 tsp peeled and finely grated root ginger
  • 4 mackerel fillets
  • 2 spring onions, trimmed and chopped on the diagonal
  • sesame seeds, to serve


Mix all the ingredients – except the fish, spring onions and sesame seeds – in a shallow dish.

Add the fish and turn to coat. Cover and refrigerate for at least one and up to six hours.

Preheat the oven to 230℃.

Line a flat oven tray with a sheet of baking parchment and place the mackerel on it in a single layer.

Bake in the preheated oven for about 8 minutes, until the mackerel is just cooked.

Sprinkle with spring onions and sesame seeds and serve.

Eaten just as Charlie ended his extended summer holidays before starting at Corpus Christi.
